Ok, sometimes I skip meals because I eat things so regularly (see: Vegemite on Toast) but I do my best to keep it interesting.

Chilli con Carne Recipe

I’ve had a few requests for the Chilli recipe so decided to post up a rough approximation of how it’s made. I usually just wing it a bit depending on what ingredients I have/what I feel like.

750gms Cheap Steak diced into 1x1x1cm cubes (or thereabouts)

1 Brown Onion

2 Carrots

2 Celery Sticks

Garlic (i use HEAPS)

2 Cans of beans. It doesnt really matter what sort but you can’t go past kidney beans.

400gms of Diced/Crushed Tomatoes

1 Bottle of beer 

1 and 1/2 Teaspoons of the Following (each) Paprika, Ground Cumin, Ground Coriander, Cayenne Pepper, Smoked Paprika. I usually put more in to taste later on.

3 or 4 Red Chillies diced 

1 Capsicum (doesn’t matter what colour really)

Juice of a Lime

Fresh Coriander Leaves (to garnish, dice the stalks and put them in the curry with the spices though)

Salt and pepper to taste.

Brown off the steak and set it aside. Then Dice up your mirepoix vegetables (and garlic) and cook them down a bit. I usually leave the onion a bit chunkier than the rest for this dish. Once they’ve been on the heat (high) for 5-10 mins then throw back in the beef and all your spices (and chilli) and coat everything. Then throw in the tomatoes, lime and beer. Bring it to the boil. Then let it simmer for an hour or two. Then throw in the beans (provided they’re not dried beans. If they are then put them in when you add the liquids). Add the capsicum and then cook for a further half hour. Add more spices/chilli if you want. If it dries out then add water or beer or beef stock and just keep reducing until you get the consistency you want.

I also usually throw in a jar of jalapeños (water and all). Also add corn every now and again. A shot or two of tequila wouldn’t hurt either. I’m fairly sure I haven’t forgotten anything. Give it a try and let me know how you get on.
